Setting up the smoker
- Pat down your chicken with a paper towel and then drizzle with the olive oil. Rub all across the skin. Season your chicken all over with the rub.
- Preheat your smoker to 225 degrees F with light wood smoke. Place your chicken on the smoker, breast side up and cook for 4-5 hours, or until the internal temperature reaches 150 degrees F in both the breast and thigh meat.
