4salmon fillets
¼cupmaple syrup
2tbsptablespoons soy sauce
1tbspDijon mustard
2cloves garlic, minced
Salt and pepper to taste
2cupsmixed vegetables (such as carrots, bell peppers, and zucchini), chopped
2tbspolive oil
Fresh parsley, chopped (for garnish)
1
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
2
In a small bowl, whisk together the maple syrup, soy sauce, Dijon mustard, minced garlic, salt, and pepper until well combined. Set aside.
3
Place the salmon fillets on the prepared baking sheet, skin side down. Brush the maple glaze generously over the top of each fillet, ensuring they are well coated.
4
In a separate bowl, toss the mixed vegetables with olive oil, salt, and pepper. Spread them out evenly on the baking sheet around the salmon fillets.
5
Place the baking sheet in the preheated oven and bake for about 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. The vegetables should be tender and lightly golden.
6
Once cooked, remove the baking sheet from the oven and let the salmon rest for a couple of minutes.
7
Serve the mouthwatering maple-glazed salmon fillets alongside the roasted vegetables. Garnish with freshly chopped parsley for an extra touch of freshness.
8
Enjoy your flavorful creation!
Note: Cooking times may vary depending on the thickness of the salmon fillets. Adjust accordingly and ensure the salmon is cooked to your desired level of doneness.
