Mouthwatering Maple-Glazed Salmon with Roasted Vegetables

 4 salmon fillets
 ¼ cup maple syrup
 2 tbsp tablespoons soy sauce
 1 tbsp Dijon mustard
 2 cloves garlic, minced
 Salt and pepper to taste
 2 cups mixed vegetables (such as carrots, bell peppers, and zucchini), chopped
 2 tbsp olive oil
 Fresh parsley, chopped (for garnish)

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a small bowl, whisk together the maple syrup, soy sauce, Dijon mustard, minced garlic, salt, and pepper until well combined. Set aside.

Place the salmon fillets on the prepared baking sheet, skin side down. Brush the maple glaze generously over the top of each fillet, ensuring they are well coated.

In a separate bowl, toss the mixed vegetables with olive oil, salt, and pepper. Spread them out evenly on the baking sheet around the salmon fillets.
